The grapes are harvested at the maximum stage of ripeness and are destemmed. 50%
it is cold macerated. The other 50% is macerated in the press for about 12 hours; once pressed
the fermentation in steel at a controlled temperature concludes. Throughout the refinement period the
two batches of wine remain separate and battonage is done on both once a week. After about 6 months the blending and the final bottling are carried out.
