Vinification and Aging
Traditional contact with the skins for up to 15 days, pumping over and 20% bleeding in the
initial phase. Fermentation for 10-15 days in steel vats at a controlled temperature. Fermentation
complete malolactic fermentation. Maturation in 2nd passage Allier French oak barriques (20% cut).
Aging in bottle for 4 months.
