Tasting Notes
Deep ruby red with garnet hues. Broad and highly complex bouquet; it immediately expresses a beautiful range of ripe dark fruits that combine with balsamic sensations of eucalyptus, undergrowth and autumn spices. Sweet hints of cocoa alternate with spicy notes of pepper, giving the bouquet deep intensity and aromatic richness. In the mouth it has a powerful but balanced structure. The soft and silky tannins convey elegance and character. The finish is vibrant, long and very persistent.

Food pairings
It goes well with roast red meat, suckling pig, braised meat, game and venison. Ideal to accompany first and second courses with strong flavours. Also at the end of the meal, with small tastings of very mature cheeses.

Winemaker's notes ...
”The secret of this wine is knowing how to wait. Knowing how to wait for the grapes to over-ripen on the vine and then knowing how to wait for the wine to mature for a long 36 months in new French oak barriques. And then waiting for another long but necessary refinement in the bottle for another 12 months. Thesan36 is always the fruit of a harvest of extraordinary value... A rich and powerful wine that takes us back to the essence of the Tuscia territory and its native vine - the Canaiolo”.
