SPARKLING WINE DOSAGE 0. WHAT DOES IT MEAN ?

You already know PRIMA LUX, our first sparkling wine. PRIMA LUX is a quality sparkling wine made using the Classic Method (Metodo Classico) and the Zero Dosage method.

Now we will delve a little deeper into the term "Dosage 0".
Let's start with synonyms. If you find the following terms on the label:
Pas Dosé, Brut Nature, Zero Dosage, Dosage Zero, Brut Sauvage, Pas Operé, Ultra Brut, Brut de Brut, Senza Dosaggio, Non Dosato, Brut non Dosé, Brut Intégral, or simply Nature, all mean the same thing. These are all sparkling wines to which no sugar has been added. inside the mixture called “liqueur d'expedition” (dosage syrup) .
The typology of sparkling wines

Understanding the different types of sparkling wines based on their residual sugar content is essential to understanding what's listed on labels. This basic information allows you to distinguish the different characteristics of a sparkling wine and choose the one that will best satisfy your palate during a toast and/or the one that best pairs with the dish you're about to eat.
Generally speaking, three main categories can be considered: dry sparkling wines, such as zero dosage, extra brut, and brut; soft sparkling wines, such as extra dry and dry; and, finally, sweet sparkling wines, such as demi sec and dolce. The table provides details on the amount of sugar permitted by law.
The uniqueness of PRIMA LUX's Zero Dosage

The term “zero dosage” refers to one of the key phases in the production of classic method sparkling wines: the dosage, which occurs after long aging on the lees.
The dosage process takes place during the “dégorgement” (disgorging or disgorging) phase, when the residual yeast is removed from the bottle and a small amount of “liqueur d'expédition” is added, a mixture of base wine and sugar to balance the wine's acidity.
In the case of zero-dosage sparkling wines like PRIMA LUX, this added sugar is absent. The result is a dry and pure wine.
Precisely because the residual sugar content of PRIMA LUX is equal to 0.2 g/l, its flavour and aromas must be pleasant to the palate and to the nose only thanks to the quality and balance of the initial sparkling Chardonnay base , which has not been “adjusted” with the addition of sugar in the liqueur d'expedition.
Producing a Dosaggio Zero therefore requires great attention and expertise. The process begins with the selection of the finest grapes , usually with high acidity and perfect ripeness, and can only represent the pinnacle of excellence among all sparkling wines.
Among other main characteristics of zero dosage sparkling wines:
- natural taste: The flavour of the wine entirely reflects the characteristics of the grape variety and the terroir ;
- high acidity: the absence of sugar accentuates the natural acidity of the wine, making it fresh and vibrant;
- pure aromatic profile: without sugar which could mask the flavour, the aromatic notes are more evident and complex.
This is precisely where the uniqueness of Prima Lux lies: the truest and most sincere expression of the sparkling wine , the maximum expression of the Tuscia territory, the most authentic expression of Chardonnay in a glass.
Just as it's made, Prima Lux Zero Dosage is best paired with seafood dishes where the raw material takes center stage : raw fish appetizers, shrimp, scampi, tartare, carpaccio, and shellfish in general. Its complex and persistent structure, resulting from long aging on the lees, also makes it a perfect accompaniment to more elaborate seafood first and second courses.
